It's hard to believe that it has been three weeks since the last time I said hello...but sometimes that is how the winter goes for me. I just hate being cold!!!! It really bums me out, and when I'm bummed, I get kinda quiet. The cold just freezes my mojo! And while I wouldn't call New York warm these days, it is warming a little, and all of the snow and ice has finally melted away. I can live with that...just a little promise of future sunshine is all I need. Before we know it, everyone will be complaining about the summer and the heat. Well...everyone but me!

saying goodbye...
to the sweet stuff (just for a little bit) and hello to the green stuff.
Normally, by mid-January I have managed to get back on track and into a healthy routine following a happy holiday season, but this year....errr, well...not so much. Somewhere between lack of sun and sub zero temps for almost three months straight, I found baking to be my distraction of choice this year. At first I was being pretty responsible and was making mostly wholesome treats. I knew, however, things had gotten out of control when I made a red velvet cake with loads of buttercream frosting a few weeks ago (and then cut a tiny little piece off the side every time I walked by...)
Time for a green intervention! A great way to fit in a little extra green is with a nutrition packed smoothie. I like to make them for breakfast, especially on busy days as they are great way to eat healthy on the go. This one has been my go-to for the past five years:
In a blender, combine 1/2 a banana, 1-2 Tbsp of natural peanut butter, 2 cups of raw spinach, 1 tsp of ground flax, 1 tsp of rice protein and enough soy or almond milk to cover the ingredients. Pulse until until all of the ingredients are well blended and the mixture is smooth and silky. Drink up!
{yummmmm!}
I know drinking spinach sounds a little...you know, icky. I promise it is practically flavorless and the high water content of the leaves prevent the smoothie from becoming to thick. Also...freeze your banana. It makes everything nice and frosty. (oh...and the flax and protein powder are optional but they amp up the nutritional value in a big way.)
Do you have a favorite smoothie recipe? I'd love to hear your favorite recipe...share please!
Happy Saturday, Ladybirds.
